Polenta Pudding with Spinach

Ingredients:

  • 1 cup POLENTA RIVARA
  • 2 cups water
  • 2 ½ cups milk
  • 2 chopped onions
  • 2 tablespoons butter
  • 3 eggs
  • 25 ounces spinach
  • ½ cup cream
  • 1 cup tomato sauce
  • 1 cup grated Parmesan cheese
  • salt, pepper and nutmeg

Instructions:

Heat water, milk and salt to boiling. Then sprinkle the polenta gradually stirring for 2 or 3 minutes with a wooden spoon. Add 2 eggs to the polenta mixture.
Boil, dry and chop the spinach.
In a non-stick skillet cook onions, 2 ounces of grated cheese, 1 egg, salt, pepper and nutmeg.
Pour half of the polenta mixture into a deep greased baking mold.
Spread the spinach preparation over the polenta and finally cover with another layer of polenta. Top with tomato sauce and parmesan cheese. Bake in oven 20 minutes.
