Mushrooms Pie with Polenta

Pie Dough:

  • 1 ½ cup wheat flour
  • 1 teaspoons salt
  • 5 ounces butter
  • 6 tablespoons cold water

Mushrooms Stuffing:

  • ½ cup POLENTA RIVARA
  • 1 ½ cups water
  • 1 cup mushrooms
  • 4 ounces butter
  • 1 cup cream
  • 4 ounces Emmenthal cheese
  • 2 eggs
  • 1 tablespoon thyme
  • ½ teaspoon salt

Instructions:

Pie: Mix wheat flour, butter, salt and water, knead the preparation and put in the refrigeration ½ hour. Using this dough line a greased baking mold.
Mushrooms Stuffing: Prepare ½ cup polenta according to the basic recipe.
In a non-stick skillet cook the mushrooms into 2 tablespoons butter.
Mix the polenta with cream, the rest of the butter, eggs, Emmental cheese, mushrooms and salt. Pour the stuffing over the pie. Sprinkle with thyme.
Bake 35 minutes in oven.
